Ingredients

1 pound (450g) potato gnocchi

1 cup fresh basil leaves, packed

1/4 cup pine nuts (plus a few extra for garnish)

1/2 cup grated Parmesan cheese

3/4 cup heavy cream

2 cloves garlic, minced

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions

Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the top, usually about 2-3 minutes. Use a slotted spoon to transfer them to a colander, allowing excess water to drain.

Make the Pesto: In a food processor, combine fresh basil leaves, pine nuts, Parmesan cheese, and minced garlic. Pulse until finely chopped. While the food processor is running, slowly drizzle in the olive oil until the mixture becomes a smooth paste. Season with salt and pepper.

Create the Creamy Sauce: In a large skillet, over medium heat, add the prepared basil pesto. Slowly pour in the heavy cream, stirring continuously until well combined. Let the mixture simmer for about 2-3 minutes, allowing it to thicken slightly.

Combine Gnocchi and Sauce: Add the cooked gnocchi to the skillet with the creamy pesto sauce. Gently stir to coat all the gnocchi, ensuring they are well covered with the pesto mixture. Cook for an additional 2-3 minutes until everything is heated through.

Serve: Plate the creamy basil pesto gnocchi and garnish with extra pine nuts and fresh basil leaves. Enjoy immediately while hot!
