Creamy Broccoli Cheddar Pasta

8 oz pasta (penne or farfalle work great)

2 cups fresh broccoli florets

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup sharp cheddar cheese, grated

½ cup Parmesan cheese, grated

1 cup fresh basil leaves

½ teaspoon salt

¼ teaspoon pepper

¼ teaspoon red pepper flakes (optional, for a kick)

Zest of 1 lemon

Juice of ½ lemon

Extra basil or parsley, for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. In the last 2-3 minutes of cooking, add the broccoli florets to the pot. Drain the pasta and broccoli, and set aside.

    Make the Pesto: In a food processor, combine the fresh basil leaves, olive oil, garlic, salt, pepper, lemon zest, and lemon juice. Blend until smooth. If the mixture is too thick, add a tablespoon of water at a time until desired consistency is reached.
