Creamy Broccoli Cheese Soup

4 cups fresh broccoli florets (about 1 large head)

1 cup diced yellow onion

2 cloves garlic, minced

2 tablespoons unsalted butter

4 cups vegetable broth

1 cup whole milk (or heavy cream for extra richness)

2 cups shredded sharp cheddar cheese

1 teaspoon Dijon mustard

Salt and black pepper to taste

1/2 teaspoon paprika (optional, for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Broccoli: Rinse the broccoli florets under cold water and chop them into small, bite-sized pieces. Set aside.

    Sauté the Aromatics: In a large pot over medium heat, melt the unsalted butter. Add the diced onion and garlic, sautéing until the onions become translucent and fragrant, about 3-4 minutes.

      Cook the Broccoli: Add the broccoli florets to the pot and stir for a couple of minutes. This will help them absorb the flavors from the onion and garlic.

        Add Broth and Simmer: Pour in the vegetable broth, bringing the mixture to a boil. Lower the heat and let it simmer for about 15-20 minutes, or until the broccoli is tender.

          Blend the Soup: Using an immersion blender, puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup to a countertop blender in batches and blend until smooth, then return it to the pot.

            Create the Creamy Base: Stir in the whole milk (or heavy cream) and once combined, add the shredded cheddar cheese and Dijon mustard. Continue to stir over low heat until the cheese melts and the soup becomes creamy.

              Season to Taste: Taste the soup and adjust the seasoning with salt and black pepper as needed. If desired, add a pinch of paprika for added flavor.

                Serve: Ladle the creamy broccoli cheese soup into bowls, garnish with chopped fresh parsley, and sprinkle with a little extra cheddar cheese or paprika for a pop of color.
