12 oz fettuccine pasta

2 boneless, skinless chicken breasts (about 1 lb)

Salt and pepper, to taste

2 tbsp olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup fresh spinach (optional)

1 tsp Italian seasoning

Fresh parsley, chopped (for garnish)

Extra Parmesan for serving

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Season the Chicken: While the pasta cooks, season both sides of the chicken breasts with salt and pepper.

      Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F). Remove from the skillet and let rest for 5 minutes before slicing.

        Make the Alfredo Sauce: In the same skillet, lower the heat to medium. Add the minced garlic and sauté for about 30 seconds until fragrant. Stir in the heavy cream and bring to a gentle simmer. Reduce the heat, then whisk in the Parmesan cheese until melted and smooth. If the sauce is too thick, gradually add the reserved pasta water to reach your desired consistency.

          Combine: Add the cooked fettuccine to the sauce and toss until well coated. Add the spinach (if using) and Italian seasoning, cooking until the spinach wilts.

            Serve: Slice the chicken and place it on top of the Alfredo pasta. Garnish with chopped parsley and extra Parmesan cheese. Serve immediately and enjoy!
