Ingredients

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

3 cups broccoli florets (fresh or frozen)

3 cloves garlic, minced

1 cup heavy cream

½ cup chicken broth

1 cup grated Parmesan cheese

8 oz (225g) fettuccine or your choice of pasta

Salt and pepper to taste

½ teaspoon crushed red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine (or pasta of your choice) and cook according to the package instructions until al dente. Drain and set aside.

Sauté the Chicken: In a large skillet over medium heat, heat the olive oil. Add the chicken pieces, season with salt and pepper, and cook for 6-8 minutes, or until golden and cooked through. Remove the chicken from the skillet and set it aside.

Sauté the Broccoli: In the same skillet, add the broccoli florets and a splash of water if needed. Sauté for 3-4 minutes until the broccoli is bright green and tender. If using frozen broccoli, cook until heated through.

Add Garlic: Stir in the minced garlic and cook for an additional minute until fragrant.

Make the Alfredo Sauce: Lower the heat to medium-low. Add the heavy cream and chicken broth to the skillet, stirring well. Bring it to a gentle simmer, then gradually whisk in the grated Parmesan cheese until the sauce is smooth and creamy.

Combine Everything: Return the cooked chicken to the skillet and add the cooked pasta, tossing everything together so that the pasta is well-coated with the sauce. If the mixture seems too thick, adjust the consistency with a little more chicken broth or pasta water.

Season and Garnish: Taste the dish and adjust seasoning with salt, pepper, and crushed red pepper flakes if desired. Remove from heat, garnish with chopped parsley, and serve immediately.
