Creamy Chicken and Broccoli One-Pot Pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

4 cups chicken broth

8 ounces penne pasta (or pasta of choice)

2 cups broccoli florets

1 cup heavy cream

1 cup grated Parmesan cheese

Fresh basil or parsley for garnish

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced chicken and season with salt, pepper, and Italian seasoning. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.

    In the same pot, add the minced garlic and sauté for about 30 seconds, until fragrant.

      Pour in the chicken broth, and add the penne pasta. Bring to a boil, then reduce the heat to a simmer. Cook according to package instructions, usually about 10-12 minutes, stirring occasionally.

        When there's about 3 minutes left of cooking, add the broccoli florets to the pot. This will allow them to steam and become tender without overcooking.

          Once the pasta and broccoli are cooked, stir in the heavy cream and grated Parmesan cheese. Mix well until the cheese is melted and the sauce is creamy and well combined.

            Add the cooked chicken back to the pot. Stir to combine everything, cooking for an additional 2-3 minutes to heat through. Adjust seasoning with more salt and pepper if necessary.

              Remove from heat and let it sit for a few minutes. Serve hot, garnished with fresh basil or parsley.
