Ingredients

2 cups cooked chicken, shredded

1 cup sweet corn (fresh, frozen, or canned)

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 stalks celery, diced

4 cups low-sodium chicken broth

1 cup heavy cream

2 tablespoons butter

1 teaspoon dried thyme

½ teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Vegetables: In a large pot, melt the butter over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, or until the onions are translucent and veggies are tender. Add the minced garlic and cook for another minute until fragrant.

Add Broth and Chicken: Pour in the chicken broth, followed by the shredded chicken, sweet corn, dried thyme, and paprika. Stir well to combine everything. Increase the heat to bring the soup to a gentle boil, then reduce to a simmer.

Let it Simmer: Allow the soup to simmer uncovered for about 20 minutes. This will help meld the flavors together and thicken the soup just slightly.

Incorporate Cream: After the soup has simmered, stir in the heavy cream. Let it warm through for another 5-10 minutes. If you desire a thicker soup, you can use an immersion blender to partially blend the soup until it reaches your preferred consistency.

Season: Taste the soup and season with salt and pepper to your liking. Feel free to add extra herbs or spices based on your preference.

Serve: Ladle the soup into bowls and garnish with freshly chopped parsley. Enjoy your creamy, comforting bowl of chicken and corn soup!
