Ingredients

3 large cucumbers, thinly sliced

1 cup plain Greek yogurt

1/2 cup sour cream

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

1 tablespoon lemon juice

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt (to taste)

1/2 teaspoon black pepper

1/4 cup red onion, finely chopped (optional)

Instructions

Prepare the Cucumbers: Start by thoroughly washing the cucumbers. Slice them thinly, either with a knife or a mandoline for even slices. If you prefer, you can peel some or all of the cucumbers based on your texture preference.

Make the Dressing: In a large mixing bowl, combine the Greek yogurt and sour cream. Mix in the fresh dill, lemon juice, garlic powder, onion powder, salt, and black pepper. Whisk everything together until it’s smooth and creamy. Adjust the seasoning according to your taste.

Combine Ingredients: Add the sliced cucumbers and red onion (if using) into the bowl with the dressing. Gently toss to coat all the cucumber slices evenly in the creamy mixture.

Chill: Cover the salad with plastic wrap or transfer to a sealed container. Refrigerate the salad for at least 1 hour to allow the flavors to meld and the cucumbers to soften slightly.

Serve: Before serving, give the salad a final gentle stir. Taste and adjust the seasonings, if needed. Garnish with additional fresh dill if desired and enjoy your refreshing salad!
