Ingredients

For the Meatballs:

1 lb (450g) ground chicken

1/2 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup grated Parmesan cheese

1/4 cup finely chopped fresh parsley

1 clove garlic, minced

1 egg

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon onion powder

1/2 teaspoon Italian seasoning

For the Creamy Garlic Butter Sauce:

3 tablespoons unsalted butter

4 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 teaspoon Dijon mustard

Salt and pepper to taste

Fresh parsley, chopped for garnish (optional)

Instructions

Make the Meatballs:

In a large mixing bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, minced garlic, egg, salt, black pepper, onion powder, and Italian seasoning. Mix until well combined, but do not overwork the meat.

      Form the Meatballs:

Using your hands, shape the mixture into meatballs about 1.5 inches in diameter. Place them on a parchment-lined baking sheet or plate.

          Cook the Meatballs:

In a large skillet, heat a drizzle of olive oil over medium heat. Add the meatballs in batches (do not overcrowd) and cook for about 5-6 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.

              Prepare the Garlic Butter Sauce:

In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant (but be careful not to burn it).

                  Create the Sauce:

Pour in the chicken broth and simmer for about 3-4 minutes, allowing it to reduce slightly. Then, reduce the heat to low, and stir in the heavy cream and Dijon mustard. Season with salt and pepper to taste, and let it simmer for another 2-3 minutes until the sauce thickens slightly.

                      Combine:

Gently add the meatballs back into the skillet, ensuring they are well coated with the creamy garlic butter sauce. Let them cook together for an additional 2-3 minutes to absorb flavors.

                          Serve:

Remove from heat and garnish with chopped fresh parsley. Serve the creamy garlic butter chicken meatballs over pasta, rice, or with crusty bread to soak up the sauce.
