Creamy Garlic Chicken with Rotini

12 oz rotini pasta

1 lb boneless, skinless chicken breasts, cubed

3 tablespoons olive oil

4 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup baby spinach

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the cubed chicken, season with salt and pepper, and cook until golden brown and cooked through (about 6-8 minutes). Remove the chicken from the skillet and set aside.

      Prepare the Garlic Sauce: In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and sauté for about 1 minute, until fragrant. Be careful not to burn the garlic.
