2 medium zucchinis, sliced into half-moons

1 medium onion, diced

4 cloves garlic, minced

1 cup unsweetened almond milk (or any milk of choice)

2 tbsp cream cheese (or dairy-free alternative)

1 tbsp olive oil

1 tsp dried oregano

1 tsp smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Sauté the Aromatics: In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add Zucchini: Stir in the sliced zucchini and cook for about 5 minutes until they start to soften.

      Incorporate Chickpeas: Add the drained chickpeas to the skillet. Sprinkle in the dried oregano, smoked paprika, salt, and pepper. Stir well to combine and cook for another 3-4 minutes, allowing the chickpeas to warm through.
