Creamy Garlic Herb Chicken Thighs

6 bone-in, skin-on chicken thighs

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 tablespoon Dijon mustard

1 teaspoon dried thyme

1 teaspoon dried basil

1 teaspoon dried oregano

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Prepare the Chicken: Season the chicken thighs generously with salt and pepper on both sides.

    Sear the Chicken: In a large skillet over medium-high heat, heat the olive oil. Once hot, place the chicken thighs skin-side down in the skillet. Sear for about 5-7 minutes, until the skin is golden brown and crispy. Flip and cook the other side for an additional 5 minutes. Remove the chicken thighs from the skillet and set aside.

      Sauté Garlic: In the same skillet, reduce the heat to medium. Add the minced garlic and sauté for about 30 seconds, until fragrant, being careful not to burn it.

        Make the Sauce: Deglaze the skillet by adding the chicken broth, scraping up any browned bits from the bottom. Allow it to simmer for 2 minutes. Stir in the heavy cream, Dijon mustard, thyme, basil, oregano, and Parmesan cheese. Mix well until the cheese is melted and the sauce is creamy.

          Cook the Chicken in Sauce: Return the chicken thighs to the skillet, skin-side up. Reduce the heat to low and cover. Let it simmer for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
