Creamy Garlic Parmesan Chicken Thighs

4 bone-in, skin-on chicken thighs

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning

1 teaspoon red pepper flakes (optional, for a kick)

Fresh parsley, chopped (for garnish)

Prepare the Chicken: Pat the chicken thighs dry with paper towels and season them generously with salt and pepper on both sides.

    Sear the Chicken: In a large skillet over medium-high heat, add the olive oil. Once hot, carefully place the chicken thighs skin-side down in the pan. Sear for about 5-7 minutes until golden brown and crispy. Flip and cook for an additional 5 minutes on the other side. Remove the chicken thighs from the skillet and set aside.

      Sauté Garlic: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant, being careful not to burn it.

        Make the Sauce: Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Allow it to simmer for a minute. Reduce the heat to low, and slowly stir in the heavy cream followed by the grated Parmesan cheese. Mix until the cheese is melted and the sauce is creamy. Add the Italian seasoning and red pepper flakes, if using.

          Combine and Cook: Return the chicken thighs to the skillet, skin-side up. Spoon some sauce over the chicken to coat. Cover the skillet with a lid, allowing the chicken to cook in the sauce for about 15-20 minutes, or until the internal temperature reaches 165°F (75°C).
