Ingredients

1 pound potato gnocchi

2 tablespoons olive oil

3 cloves garlic, minced

6 cups fresh spinach (about 5 oz)

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional)

Freshly chopped parsley for garnish

Instructions

Cook the Gnocchi: In a large pot of salted boiling water, cook the potato gnocchi according to package instructions. They are done when they float to the surface, usually in about 2-3 minutes. Drain and set aside.

Sauté the Garlic: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

Add the Spinach: Gradually add the fresh spinach to the skillet with the garlic. Cook while stirring until the spinach wilts down, which should take about 2-3 minutes.

Make the Cream Sauce: Lower the heat and pour in the heavy cream, stirring to combine with the spinach and garlic. Bring to a gentle simmer.

Incorporate the Cheese: Add the grated Parmesan cheese, garlic powder, onion powder, salt, and pepper to the skillet. Stir until the cheese has melted completely and the sauce is thick and creamy. If desired, add red pepper flakes for a little heat.

Combine with Gnocchi: Add the drained gnocchi to the sauce, gently folding to coat the gnocchi evenly. Cook for an additional 2-3 minutes to allow the flavors to meld.

Serve: Remove from heat and garnish with freshly chopped parsley. Serve hot and enjoy!
