8 oz (225g) pasta (fettuccine or penne works great)

2 tablespoons olive oil

4 cloves garlic, minced

5 oz (140g) fresh spinach, roughly chopped

1 cup heavy cream

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and black pepper to taste

Zest of 1 lemon

2 tablespoons fresh lemon juice

Optional: red pepper flakes for a spicy kick

Fresh basil leaves for garnish

Cook the Pasta: Start by bringing a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about ½ cup of pasta water, then drain and set aside.

    Sauté the Garlic: In a large skillet over medium heat, warm the olive oil. Add the minced garlic and sauté for about 1-2 minutes until fragrant and golden brown, being careful not to burn it.

      Add the Spinach: Stir in the chopped spinach and cook for 2-3 minutes until it wilts down, stirring frequently.

        Create the Cream Sauce: Reduce the heat to low and pour in the heavy cream. Stir in the grated Parmesan cheese and Italian seasoning. Allow the mixture to simmer gently for about 3-5 minutes, stirring until the cheese melts and the sauce thickens slightly.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet. Mix well until the pasta is evenly coated with the creamy garlic sauce. If the sauce is too thick, gradually add some reserved pasta water until you reach your desired consistency.
