Creamy Lemon Garlic Chicken with Zucchini Noodles

Ingredients
  

4 boneless, skinless chicken breasts

2 medium zucchinis, spiralized into noodles

1 cup heavy cream

1 cup chicken broth

3 tablespoons olive oil

4 cloves garlic, minced

Juice and zest of 1 large lemon

1 teaspoon dried Italian herbs (or a mix of basil, oregano, and thyme)

Salt and pepper, to taste

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken:

    - Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and dried Italian herbs.

      Sear the Chicken:

        - In a large skillet over medium-high heat, add 2 tablespoons of olive oil. Once hot, add the seasoned chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.

          Make the Lemon Garlic Sauce:

            - In the same skillet, reduce the heat to medium, and add the remaining 1 tablespoon of olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant.

              - Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes.

                - Stir in the heavy cream, lemon juice, and zest, continuing to cook for another 2 minutes until slightly thickened.

                  Finish with Cheese:

                    - Lower the heat and add the grated Parmesan cheese to the sauce, stirring until melted and integrated. Add salt and pepper to taste.

                      Cook the Zucchini Noodles:

                        - In a separate pan, quickly sauté the spiralized zucchini noodles in a little olive oil over medium heat for about 2-3 minutes, just until they begin to soften. Remove from heat.

                          Combine and Serve:

                            - Slice the cooked chicken and return it to the skillet with the lemon garlic sauce. Toss in the sautéed zucchini noodles, mixing to coat everything well.

                              - Serve hot, garnished with fresh chopped parsley.
