Ingredients

1 cup orzo pasta

3 cups vegetable broth (or water)

2 tablespoons olive oil

4 cloves garlic, minced

1 small onion, finely chopped

1/2 teaspoon red pepper flakes (optional)

1 cup heavy cream (or coconut cream for a dairy-free option)

Zest of 1 lemon

Juice of 1 lemon

1/2 cup grated Parmesan cheese (or nutritional yeast for dairy-free)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Extra lemon wedges (for serving)

Instructions

Cook the Orzo: In a medium saucepan, bring the vegetable broth to a boil. Add the orzo and cook according to package instructions until al dente. This usually takes about 8-10 minutes. Stir occasionally to prevent sticking.

Sauté Aromatics: While the orzo is cooking, heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and red pepper flakes (if using), and sauté for an additional 1-2 minutes until fragrant.

Create the Creamy Sauce: Lower the heat to medium-low. Stir in the heavy cream and let it come to a gentle simmer. Add in the lemon zest and juice, mixing well. Allow the sauce to thicken slightly, about 3-5 minutes.

Combine Orzo and Sauce: Drain the cooked orzo, reserving a splash of the broth. Add the orzo directly to the skillet with the creamy lemon garlic sauce. Stir well to combine, and if it’s too thick, add a bit of the reserved broth until the desired creaminess is achieved.

Incorporate Cheese: Stir in the grated Parmesan (or nutritional yeast), mixing until melted and creamy. Season with salt and pepper to taste.

Serve and Garnish: Remove from heat and garnish with fresh chopped parsley. Serve immediately with extra lemon wedges on the side for an added zing.
