Ingredients

1 cup orzo pasta

2 tablespoons olive oil

3 cloves garlic, minced

4 cups fresh spinach, roughly chopped

1 cup vegetable broth

1 cup heavy cream

Zest of 1 lemon

Juice of 1 lemon

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper, to taste

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Lemon slices (for garnish)

Instructions

Cook the Orzo: In a large pot, bring salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and set aside.

Sauté Garlic and Spinach: In the same pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it. Stir in the chopped spinach and cook until wilted, about 2-3 minutes.

Create the Creamy Sauce: Pour in the vegetable broth and bring to a simmer. Stir in the heavy cream, lemon zest, lemon juice, and red pepper flakes (if using). Allow it to simmer for about 5 minutes, letting it thicken slightly.

Combine Orzo with Sauce: Add the cooked orzo to the pot and gently fold it into the creamy sauce. Season with salt and black pepper to taste.

Finish with Cheese: Remove the pot from heat and stir in the grated Parmesan cheese until melted and combined, creating a rich and creamy texture.

Serve and Garnish: Divide the creamy lemon orzo among serving bowls, garnish with fresh parsley and a lemon slice on top.

Enjoy! Serve hot and enjoy the zesty, creamy flavors!
