Creamy Lemon Spinach Gnocchi

1 lb (450g) potato gnocchi (store-bought or homemade)

2 cups fresh spinach, roughly chopped

1 cup heavy cream

1 tablespoon olive oil

3 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

A pinch of red pepper flakes (optional)

Fresh basil leaves, for garnish

Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to the package instructions (usually 2-3 minutes until they float). Drain and set aside.

    Sauté the Spinach: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned. Add the chopped spinach and cook until wilted, about 2-3 minutes.

      Make the Cream Sauce: Pour in the heavy cream, stirring to combine. Bring the mixture to a gentle simmer, then add the lemon zest and lemon juice. Cook for 2-3 minutes until the sauce slightly thickens.

        Combine and Season: Stir in the cooked gnocchi and grated Parmesan cheese, tossing gently to coat. Season with salt, pepper, and red pepper flakes to taste. If the sauce is too thick, you can add a few tablespoons of pasta water to loosen it.
