Ingredients
  

1 cup fresh lemon juice (about 4-6 lemons)

1 cup sweetened condensed milk

1 cup whole milk (or coconut milk for a dairy-free option)

1/2 cup water

1/2 cup granulated sugar (adjust to taste)

1 tsp vanilla extract

Zest of 2 lemons

A pinch of salt

Optional garnishes: lemon slices, mint leaves

Instructions
 

Prep the Ingredients: Start by juicing the lemons to yield about 1 cup of fresh lemon juice. Zest 2 lemons and set aside.

    Mix the Base: In a medium bowl, combine the fresh lemon juice, sweetened condensed milk, whole milk (or coconut milk), and water. Stir until well combined.

      Sweeten the Mix: Gradually add the granulated sugar, stirring continuously, until fully dissolved. Taste and adjust sweetness according to your preference.

        Add Flavor: Mix in the vanilla extract, lemon zest, and a pinch of salt, blending well to incorporate all flavors.

          Fill the Molds: Pour the creamy lemon mixture into popsicle molds, filling each one almost to the top. Leave a little space to allow for expansion.

            Insert Sticks: Insert popsicle sticks into each mold. If you're using a block style mold, you may need to freeze for about 30 minutes before inserting the sticks to ensure they stand upright.

              Freeze: Place the molds in the freezer and freeze for at least 6 hours, or until completely solid.

                Unmold and Serve: To remove the pops, run warm water over the outside of the molds for a few seconds until they loosen. Pull out gently and serve immediately. For an added touch, garnish with a thin slice of lemon or a sprig of mint.
