Creamy Mushroom Garlic Gnocchi

1 lb (450g) potato gnocchi

2 cups fresh mushrooms (cremini or button), sliced

4 cloves garlic, minced

1 medium onion, chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 tbsp olive oil

1 tbsp butter

Salt and pepper, to taste

1 tsp dried thyme (or 1 tbsp fresh thyme, chopped)

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

Cook the Gnocchi: In a large pot of boiling salted water, cook the gnocchi according to the package instructions, usually about 3-4 minutes or until they float to the surface. Drain and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil and butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

      Add Garlic and Mushrooms: Stir in the minced garlic and sliced mushrooms. Cook until the mushrooms are tender and golden brown, about 5-7 minutes. Stir in the dried thyme, salt, and pepper.

        Make the Creamy Sauce: Lower the heat and pour in the heavy cream. Simmer for 2-3 minutes, stirring often to prevent it from sticking. Add the grated Parmesan cheese and mix well until the cheese melts and the sauce is creamy.

          Combine Gnocchi with Sauce: Gently fold in the cooked gnocchi into the sauce, ensuring they are well-coated. Cook for another 2 minutes, allowing the gnocchi to absorb some of the sauce.

            Garnish and Serve: Remove from heat and garnish with fresh parsley. Serve hot, drizzling extra Parmesan on top if desired.
