Ingredients

1 lb (450g) boneless, skinless chicken breasts, diced

12 oz (340g) fettuccine pasta

4 cups (960ml) chicken broth

1 cup (240ml) heavy cream

1 cup (100g) grated Parmesan cheese

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Chicken: In a large pot or deep skillet, heat the olive oil over medium-high heat. Add the diced chicken, season with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the pot and set aside.

Sauté the Garlic: In the same pot, lower the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant, making sure not to burn it.

Cook the Pasta: Add the chicken broth and bring it to a boil. Once boiling, stir in the fettuccine pasta. Reduce the heat to medium-low and simmer for about 10 minutes, stirring occasionally, until the pasta is al dente and most of the broth has been absorbed.

Make it Creamy: Stir in the heavy cream and grated Parmesan cheese until well combined. Let it simmer for another 2-3 minutes until the sauce thickens slightly.

Combine: Return the cooked chicken to the pot, stirring until everything is well mixed and the chicken is heated through. Adjust seasoning with additional salt and pepper if needed.

Serve: Garnish with freshly chopped parsley before serving. Enjoy your creamy and delicious one-pot chicken alfredo pasta!
