Creamy One-Pot Chicken and Broccoli Pasta

1 lb (450g) boneless, skinless chicken breasts, diced

8 oz (225g) pasta of your choice (farfalle, penne, or fusilli work great)

2 cups broccoli florets, fresh or frozen

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Sauté the Chicken: In a large pot, heat olive oil over medium heat. Add the diced chicken, season with salt, pepper, and Italian seasoning. Cook until browned and fully cooked through, about 5-7 minutes. Remove the chicken and set aside.

    Cook the Aromatics: In the same pot, add the chopped onion. Sauté until translucent, about 3 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.

      Combine Pasta and Broth: Pour in the chicken broth and bring it to a boil. Once boiling, add the pasta and cook according to package instructions, usually about 8-10 minutes, stirring occasionally.

        Add Broccoli: About 3 minutes before the pasta is done, add the broccoli florets to the pot. This will ensure they are perfectly cooked but still vibrant and crisp.

          Make it Creamy: Once the pasta and broccoli are cooked, reduce the heat to low. Stir in the heavy cream and Parmesan cheese, mixing until the sauce is creamy and the cheese is melted. Add the cooked chicken back into the pot, stirring to combine all ingredients evenly.

            Adjust Seasoning: Taste and adjust the seasoning with additional salt and pepper if needed. If the sauce is too thick, add a splash more chicken broth or cream to reach your desired consistency.
