2 tablespoons olive oil

1 pound (450g) boneless, skinless chicken thighs, diced

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper, to taste

8 ounces (225g) cremini mushrooms, sliced

3 cloves garlic, minced

1 teaspoon dried basil

1 teaspoon dried oregano

4 cups (960ml) chicken broth

12 ounces (340g) fettuccine or spaghetti, uncooked

1 cup (240ml) heavy cream

1 cup (100g) grated Parmesan cheese

Fresh parsley, chopped, for garnish

Instructions
 

Sauté Chicken: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the diced chicken thighs, sprinkle with garlic powder, onion powder, salt, and pepper. Sauté for about 5-7 minutes until the chicken is browned and cooked through. Remove the chicken from the pot and set aside.

    Cook Mushrooms: In the same pot, add the sliced mushrooms and cook for about 4-5 minutes until they are soft and browned. Add the minced garlic, dried basil, and oregano, cooking for an additional 1-2 minutes until fragrant.

      Combine Ingredients: Return the cooked chicken to the pot with the mushrooms. Pour in the chicken broth and bring it to a boil. Once boiling, add the uncooked fettuccine. Stir well to ensure the pasta is submerged in the broth.
