1 cup orzo pasta

2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

8 ounces mushrooms, sliced (preferably cremini or button)

4 cups fresh spinach

3 cups vegetable or chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

½ cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Cook the Orzo: In a large pot, bring salted water to a boil. Add the orzo and cook according to the package directions until al dente. Drain and set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

      Add the Mushrooms: Toss the sliced mushrooms into the skillet and cook for about 5-7 minutes, stirring occasionally, until they become tender and golden brown.

        Incorporate Spinach: Add the fresh spinach into the skillet and stir until wilted, which should take about 2 minutes.

          Create the Creamy Sauce: Pour in the vegetable or chicken broth and bring to a simmer. Reduce the heat to low and stir in the heavy cream, dried thyme, salt, and pepper. Let the mixture simmer gently for about 5 minutes, allowing the flavors to meld and the sauce to thicken slightly.

            Combine with Orzo: Stir the cooked orzo into the creamy mixture, followed by the grated Parmesan cheese. Mix well until the orzo is fully coated and the cheese is melted. Adjust seasoning if necessary.
