4 ripe peaches, peeled and pitted

1 cup coconut milk

1 cup vegetable broth

1 tablespoon honey or maple syrup (adjust to taste)

1 tablespoon fresh lime juice

1 teaspoon fresh ginger, grated (optional)

Salt and pepper to taste

Fresh mint leaves for garnish

1 tablespoon olive oil (for sautéing)

1 small onion, chopped

2 cloves garlic, minced

Instructions
 

In a pot, heat olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.

    Add the minced garlic and grated ginger (if using) to the pot, stirring frequently until fragrant, approximately 1 minute.

      Slice the peeled peaches and add them to the pot. Cook for about 3-4 minutes, stirring occasionally, until the peaches start to soften.

        Pour in the vegetable broth and bring the mixture to a gentle simmer. Allow to cook for about 10 minutes, or until the peaches are completely soft.

          Remove the pot from heat and let it cool slightly. Using an immersion blender or a countertop blender, blend the mixture until smooth and creamy.

            Stir in the coconut milk, honey (or maple syrup), and lime juice. Blend again until fully incorporated and adjust seasoning with salt and pepper to taste.

              Chill the soup in the refrigerator for at least an hour before serving for a refreshing experience.

                Serve cold in bowls, garnished with fresh mint leaves.
