Ingredients
  

1 package (9 oz) cheese tortellini (fresh or frozen)

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach leaves

½ cup basil pesto (store-bought or homemade)

1 cup heavy cream

½ cup grated Parmesan cheese

Salt and pepper, to taste

Fresh basil leaves, for garnish

Toasted pine nuts, for garnish (optional)

Instructions
 

Cook Tortellini: Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and set aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

      Cook Tomatoes: Add the cherry tomatoes to the skillet and cook for another 3-4 minutes, until they start to soften and burst.

        Add Spinach: Stir in the fresh spinach leaves and cook for about 2 minutes, just until wilted.

          Make the Sauce: Lower the heat and add the pesto and heavy cream to the skillet. Stir until well combined, then let it simmer gently for about 2 minutes.
