12 oz fettuccine pasta

1 cup canned pumpkin puree (not pumpkin pie filling)

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/4 cup unsalted butter

3 cloves garlic, minced

1 teaspoon ground nutmeg

1 teaspoon ground cinnamon

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish)

Optional: crispy pancetta or bacon bits for topping

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to the package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set aside.

    Make the Alfredo Sauce: In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.

      Add Pumpkin and Cream: Stir in the pumpkin puree and heavy cream. Mix well and let it simmer for about 5 minutes, allowing the flavors to meld.

        Season the Sauce: Add the grated Parmesan cheese, nutmeg, cinnamon, salt, and pepper. Stir until the cheese is melted and the sauce is creamy. If the sauce is too thick, add reserved pasta water a little at a time until you reach your desired consistency.

          Combine Pasta and Sauce: Add the cooked fettuccine to the skillet with the creamy pumpkin sauce. Toss well to coat the pasta evenly with the sauce.
