Ingredients

12 oz fettuccine pasta

4 cups corn kernels (fresh, frozen, or roasted)

2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 cup heavy cream

1 cup vegetable broth

1/2 cup grated Parmesan cheese (plus extra for serving)

1 teaspoon dried thyme

1/2 teaspoon red pepper flakes (adjust for spice preference)

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions

Roast the Corn:

    - If using fresh corn, preheat the oven to 400°F (200°C). Toss corn on a baking sheet with olive oil, salt, and pepper. Roast for 20-25 minutes until lightly charred and tender. If using frozen corn, skip this step as it can be added directly to the sauté later.

      Cook the Pasta:

        - Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

          Sauté the Vegetables:

            - In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, and sauté for about 5 minutes until the onion is translucent and fragrant.

              Combine Ingredients:

                - Stir in the roasted corn (or frozen corn), heavy cream, vegetable broth, dried thyme, and red pepper flakes. Bring the mixture to a gentle simmer.

                  Add the Cheese:

                    - Stir in the grated Parmesan cheese and season with salt and pepper to taste. Let the sauce simmer for about 5 minutes, thickening slightly.

                      Mix Pasta and Sauce:

                        - Add the drained fettuccine to the skillet with the creamy corn sauce. If the sauce is too thick, add reserved pasta water a little at a time until you reach the desired consistency. Toss to coat the pasta evenly.

                          Serve:

                            - Serve hot, garnished with freshly chopped basil and extra Parmesan cheese. Add a sprinkle of red pepper flakes for an extra kick if desired.
