2 pounds Yukon Gold potatoes, peeled and cubed

1 bulb of garlic

1/4 cup unsalted butter

1 cup heavy cream (or milk for a lighter option)

1/2 cup sour cream

Salt, to taste

Black pepper, to taste

Fresh chives or parsley, chopped (for garnish)

Instructions
 

Roast the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Slice the top off the bulb of garlic to expose the cloves. Drizzle with olive oil, wrap in aluminum foil, and roast for about 30-35 minutes until soft and caramelized. Let it cool slightly.

        Cook the Potatoes:

          - Place the cubed potatoes in a large pot and cover them with water. Add a pinch of salt.

            - Bring to a boil over medium-high heat, then reduce to a simmer and cook until the potatoes are tender, about 15-20 minutes.

              Prepare Creamy Mixture:
