Creamy Roasted Tomato Bisque

2 lbs ripe tomatoes, halved

1 large onion, chopped

4 cloves garlic, peeled

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon salt

½ teaspoon freshly ground black pepper

1 teaspoon dried basil (or 2 teaspoons fresh basil, chopped)

4 cups vegetable broth

1 cup heavy cream or coconut cream for a vegan option

1 tablespoon fresh parsley, chopped (for garnish)

Optional: Crusty bread or grilled cheese sandwiches for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Vegetables: On a large baking sheet, arrange the halved tomatoes, chopped onion, and garlic cloves. Drizzle with olive oil, balsamic vinegar, salt, pepper, and basil. Toss gently to coat everything evenly. Roast in the oven for 30-35 minutes, or until the tomatoes are blistered and caramelized.

      Blend the Roasted Mixture: Once roasted, remove the vegetables from the oven and allow them to cool slightly. In a blender, combine the roasted tomatoes, onion, and garlic with 2 cups of vegetable broth. Blend until smooth. You may need to do this in batches if your blender is small.

        Simmer the Soup: Pour the blended tomato mixture into a large pot over medium heat. Stir in the remaining vegetable broth and bring to a gentle simmer. Cook for 10-15 minutes to meld the flavors together.

          Add Cream: Reduce the heat to low and stir in the heavy cream (or coconut cream). Allow the bisque to warm through for another 5 minutes, stirring occasionally. Taste and adjust seasoning if necessary.
