1 lb (450g) cherry tomatoes

3 tablespoons olive oil

Salt and freshly ground black pepper, to taste

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional for heat)

1 cup heavy cream

1/2 cup grated Parmesan cheese, plus extra for serving

12 oz (340g) pasta of choice (penne or fettuccine work great)

Fresh basil leaves for garnish

Instructions
 

Preheat the Oven:

    Preheat your oven to 400°F (200°C).

      Roast the Tomatoes:

        In a large bowl, toss the cherry tomatoes with 2 tablespoons of olive oil, salt, pepper, minced garlic, oregano, basil, and red pepper flakes (if using). Spread the seasoned tomatoes in an even layer on a baking sheet. Roast in the preheated oven for about 20-25 minutes until they are blistered and bursting.

          Cook the Pasta:

            While the tomatoes are roasting, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about 1 cup of pasta cooking water and then drain the pasta.

              Prepare the Sauce:

                In a large skillet over medium heat, add the remaining tablespoon of olive oil. Once hot, pour in the heavy cream and bring to a gentle simmer. Stir in the roasted tomatoes along with their juices and the grated Parmesan cheese. Mix well until the cheese is melted and the sauce is creamy. If the sauce becomes too thick, add reserved pasta water a little at a time until desired consistency is reached.

                  Combine Pasta and Sauce:

                    Add the drained pasta to the skillet with the creamy tomato sauce. Toss well to coat the pasta in the sauce, ensuring each piece is well-covered.
