20 jumbo pasta shells

1 cup fresh spinach, chopped

1 cup canned artichoke hearts, drained and chopped

1 cup ricotta cheese

1 cup cream cheese, softened

1 cup mozzarella cheese, shredded (plus extra for topping)

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

2 tablespoons fresh lemon juice

1/2 teaspoon salt

1/2 teaspoon black pepper

1 jar (24 oz) marinara sauce

Fresh parsley for garnish (optional)

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Cook the Pasta Shells: Bring a large pot of salted water to a boil. Add the jumbo pasta shells and cook according to package instructions until al dente. Drain and set aside to cool slightly.

      Prepare the Filling: In a large mixing bowl, combine the chopped spinach, chopped artichoke hearts, ricotta cheese, cream cheese, 1 cup of mozzarella cheese, Parmesan cheese, minced garlic, red pepper flakes (if using), lemon juice, salt, and black pepper. Mix well until all ingredients are combined and creamy.

        Stuff the Shells: Using a spoon or a piping bag, fill each cooked pasta shell generously with the creamy spinach and artichoke filling. Arrange the stuffed shells in a large baking dish.

          Add Sauce: Pour the marinara sauce evenly over the stuffed shells, ensuring they are well-covered. Sprinkle the remaining mozzarella cheese on top.
