8 oz (225g) fettuccine or spaghetti

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz (225g) cremini or button mushrooms, sliced

4 cups fresh spinach, roughly chopped

1 cup (240ml) heavy cream

1/2 cup (120ml) vegetable broth

1/2 cup (50g) grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh basil or parsley, for garnish (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine or spaghetti and cook according to package instructions until al dente. Reserve 1 cup of the pasta water, then drain and set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

      Cook the Mushrooms: Add the sliced mushrooms to the skillet. Cook for 5-7 minutes until they are golden brown and have released their moisture.

        Add Spinach: Stir in the chopped spinach and cook until wilted, about 2-3 minutes.

          Make the Cream Sauce: Reduce the heat to low and pour in the heavy cream and vegetable broth. Add the grated Parmesan cheese, Italian seasoning, and stir to combine. Allow the mixture to simmer gently for about 3-5 minutes until it thickens slightly. Season with salt and pepper to taste.
