Creamy Spinach Ricotta Pasta Bake

12 oz (340 g) rigatoni or penne pasta

1 tbsp olive oil

3 cloves garlic, minced

1 onion, diced

5 oz (140 g) fresh spinach (or 10 oz frozen spinach, thawed and drained)

15 oz (425 g) ricotta cheese

1 cup (240 ml) heavy cream

1 cup (100 g) grated Parmesan cheese

1 tsp Italian seasoning

½ tsp red pepper flakes (optional)

Salt and pepper to taste

1 cup (100 g) shredded mozzarella cheese

Fresh basil or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: Bring a large pot of salted water to a boil. Add the rigatoni or penne pasta and cook according to package instructions until al dente. Drain and set aside.

      Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.

        Add Spinach: Stir in the fresh spinach and cook until wilted, about 2-3 minutes. If using frozen spinach, add it and cook until heated through. Season with salt, pepper, and red pepper flakes if using.

          Mix the Cheese: In a large mixing bowl, combine the ricotta cheese, heavy cream, half of the Parmesan cheese (½ cup), Italian seasoning, and a pinch more salt and pepper. Mix until smooth and creamy.

            Combine Pasta and Cheese Mixture: Add the cooked pasta and sautéed spinach mixture to the bowl with the ricotta mixture. Stir gently to combine until all the pasta is coated evenly.

              Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13 inch (3-quart) baking dish. Spread it out evenly, and sprinkle the remaining Parmesan and the mozzarella cheese on top.

                Bake the Dish: Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the top is golden and bubbly.

                  Garnish and Serve: Remove from the oven and let it cool for a few minutes. Optionally, garnish with fresh basil or parsley before serving.
