Creamy Sun-Dried Tomato Gnocchi

1 lb (450g) potato gnocchi

1 cup sun-dried tomatoes, chopped (preferably oil-packed)

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional, for heat)

Salt and pepper to taste

Fresh basil leaves for garnish

Extra Parmesan for serving

Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the potato gnocchi and cook according to package instructions, usually about 2-3 minutes or until they float to the surface. Drain and set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

      Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and cook for an additional 2-3 minutes to allow their flavors to infuse into the oil.
