1 cup fresh sweet corn kernels (or canned, drained)

1 ripe avocado, diced

½ cup Greek yogurt (or sour cream)

1 lime, juiced

1 teaspoon garlic powder

½ teaspoon cumin

Salt and pepper to taste

¼ cup fresh cilantro, chopped (plus extra for garnish)

½ small red onion, finely diced

1 jalapeño, seeded and finely chopped (optional for heat)

Cherry tomatoes, halved (for garnish)

Crumbled feta cheese or cotija (optional for garnish)

Prepare the Sweet Corn Mix: In a medium bowl, combine the fresh sweet corn kernels, Greek yogurt, lime juice, garlic powder, cumin, salt, and pepper. Mix well until the corn is coated evenly. Gently fold in the diced avocado and cilantro, being careful not to mash the avocado too much.

    Toast the Tostadas: Preheat your oven to 375°F (190°C). Place the corn tostadas on a baking sheet and bake for about 5-7 minutes, or until they are crispy and golden brown.

      Assemble the Tostadas: Once toasted, remove the tostadas from the oven. Spoon a generous amount of the creamy sweet corn and avocado mixture onto each tostada, distributing evenly.

        Add Toppings: Sprinkle the diced red onion, chopped jalapeño (if using), cherry tomato halves, and extra cilantro over the prepared tostadas. If desired, finish with crumbled feta cheese or cotija for an added burst of flavor.
