1 red bell pepper, sliced

1 cup mushrooms, sliced

2 cups vegetable broth

1 can (13.5 oz) coconut milk

2 tablespoons red curry paste

1 tablespoon soy sauce (or tamari for gluten-free)

1 tablespoon lime juice

1 teaspoon sugar (coconut sugar recommended)

1 cup cooked chicken or tofu, shredded (optional)

1 cup fresh spinach or bok choy

1 lime, cut into wedges (for serving)

Fresh cilantro, for garnish

Sliced red chili, for garnish (optional)

Instructions
 

Sauté the Aromatics: In a large saucepan or pot, heat the coconut oil over medium heat. Once hot, add the chopped onion and sauté for about 3-4 minutes, or until translucent. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
