Creamy Tomato Avocado Pasta

12 oz pasta (fettuccine or penne works well)

2 ripe avocados, pitted and peeled

1 cup cherry tomatoes, halved

1 clove garlic, minced

1/2 cup fresh basil leaves, packed

1/4 cup extra virgin olive oil

1 teaspoon lemon juice

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

Grated Parmesan cheese, for serving (optional)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

    Prepare the Avocado Sauce: While the pasta cooks, combine the avocados, minced garlic, basil, olive oil, lemon juice, salt, and pepper in a food processor or blender. Blend until smooth and creamy. If the mixture is too thick, add a little reserved pasta water to reach your desired consistency.
