4 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

1 medium onion, diced

4 cloves garlic, minced

1 can (14 oz) diced tomatoes (with juice)

1 cup heavy cream

1 cup fresh basil leaves, chopped (plus extra for garnish)

1 teaspoon Italian seasoning

½ cup grated Parmesan cheese

1 tablespoon balsamic vinegar

Cooked pasta or rice, for serving (optional)

Instructions
 

Prepare the Chicken: Season both sides of the chicken breasts with salt and pepper.

    Sear the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the chicken breasts and cook for about 5-7 minutes on each side until they are golden brown and cooked through. Remove from the skillet and set aside.

      Sauté the Aromatics: In the same skillet, add the diced onion and sauté for 3-4 minutes until it starts to soften. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
