8 oz (225 g) of penne or spaghetti pasta

2 tablespoons olive oil

4 cloves garlic, minced

1 can (14 oz/400 g) diced tomatoes, undrained

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

1 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper to taste

1 cup fresh basil leaves, chopped

Extra Parmesan cheese for serving

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Sauté the Garlic: In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

      Add Tomatoes and Seasonings: Pour in the canned diced tomatoes (with juices), dried oregano, and red pepper flakes (if using). Stir well and bring to a gentle simmer. Let it cook for 5-7 minutes, allowing the flavors to meld.

        Create the Cream Sauce: Lower the heat and add the heavy cream to the skillet. Stir until combined and let it simmer for another 3-5 minutes until slightly thickened.

          Incorporate the Cheese: Stir in the grated Parmesan cheese and salt and pepper to taste. Mix until the cheese is melted and the sauce is creamy.

            Combine Pasta and Sauce: Add the cooked pasta to the sauce, along with the reserved pasta water a little at a time until you reach your desired consistency. Toss everything together to evenly coat the pasta in the creamy sauce.

              Finish with Fresh Basil: Stir in the chopped basil leaves, mixing thoroughly. Taste and adjust seasoning if necessary.

                Serve: Plate the pasta and top with additional grated Parmesan cheese and fresh basil leaves for garnish.
