Ingredients

8 oz (about 2 cups) of pasta (penne or fusilli works well)

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes (with juices)

1 cup heavy cream

1/2 cup vegetable or chicken broth

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

1 cup fresh basil leaves, chopped (plus extra for garnish)

1/2 cup grated Parmesan cheese (plus extra for garnish)

Crushed red pepper flakes (optional, for heat)

Instructions

Cook the pasta: In a large skillet or pot, bring water to a boil. Add a pinch of salt and the pasta. Cook according to package instructions until al dente. Drain and set aside.

Sauté garlic: In the same skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant but not browned.

Add tomatoes: Stir in the diced tomatoes with their juices. Cook for about 3-4 minutes, allowing the mixture to bubble and thicken slightly.

Create the sauce: Reduce heat to low and add in the heavy cream and vegetable or chicken broth. Stir well to combine. Add the dried basil, oregano, salt, and pepper. Allow to simmer for 5-7 minutes, stirring occasionally.

Combine pasta and sauce: Once the sauce has thickened, add the cooked pasta to the skillet. Toss well to ensure the pasta is fully coated with the creamy sauce.

Finish with basil and cheese: Stir in the chopped fresh basil and grated Parmesan cheese. Mix until the cheese has melted and everything is well combined.

Serve: Plate the creamy tomato basil pasta and garnish with extra fresh basil, crushed red pepper flakes, and additional Parmesan cheese if desired. Enjoy hot!
