Ingredients
  

For the Creamy Tomato Basil Soup:

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 (14.5 oz) cans of diced tomatoes (with juice)

1 cup vegetable broth

1 cup heavy cream

1 tablespoon sugar (optional, to balance acidity)

Salt and pepper to taste

1 teaspoon dried oregano

1/2 cup fresh basil leaves, chopped (plus extra for garnish)

For the Grilled Cheese:

4 slices of your favorite bread (sourdough or whole grain recommended)

4 slices of cheddar cheese (or your preferred cheese)

2 tablespoons butter, softened

Instructions
 

Prepare the Soup:

    - In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, or until translucent.

      - Stir in the minced garlic and cook for an additional minute until fragrant.

        - Add the diced tomatoes (with their juice), vegetable broth, sugar (if using), dried oregano, salt, and pepper. Bring the mixture to a simmer.

          - Reduce the heat and let simmer for 20 minutes, stirring occasionally.

            - Remove from heat and stir in the heavy cream and fresh basil. Using an immersion blender, blend the soup until smooth (or carefully transfer to a blender in batches). Adjust seasoning if necessary.

              - Return the soup to the stove on low heat to keep warm while you prepare the grilled cheese.

                Make the Grilled Cheese:

                  - Heat a skillet over medium heat. Spread softened butter on one side of each slice of bread.

                    - Place two slices of bread, buttered side down, onto the skillet. Layer two slices of cheese on top of each slice of bread.

                      - Top with the remaining slices of bread, buttered side facing up.

                        - Cook for about 3-4 minutes, or until the bread is golden brown. Flip carefully and cook the other side until the bread is golden and the cheese is melted (another 3-4 minutes).

                          - Remove from the skillet and let cool for a minute before slicing diagonally.

                            Serve:

                              - Ladle the creamy tomato basil soup into bowls. Garnish with additional fresh basil. Serve hot alongside the crispy grilled cheese sandwiches.
