Ingredients

2 cups cheese tortellini (fresh or frozen)

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

4 cups vegetable broth

1 can (14 oz) crushed tomatoes

1 can (15 oz) diced tomatoes

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

1 cup heavy cream

1 cup fresh basil leaves, chopped

Salt and pepper to taste

Grated Parmesan cheese, for serving

Instructions

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until softened and translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute, until fragrant.

Add Tomatoes and Broth: Pour in the crushed tomatoes, diced tomatoes, and vegetable broth. Stir to combine.

Season the Soup: Add dried oregano, dried basil, and red pepper flakes (if using). Bring the mixture to a gentle simmer, and let it cook for about 10-15 minutes, letting the flavors meld together.

Cook the Tortellini: Add the cheese tortellini to the pot and cook according to package instructions (usually about 3-5 minutes for fresh and 7-9 minutes for frozen). Stir occasionally to prevent sticking.

Make it Creamy: Once the tortellini is cooked, reduce the heat to low. Stir in the heavy cream and chopped fresh basil. Allow the soup to simmer for an additional 2-3 minutes for the flavors to marry. Season with salt and pepper to taste.

Serve: Ladle the soup into bowls and top generously with grated Parmesan cheese and extra basil if desired. Enjoy your creamy tomato basil tortellini soup!
