Ingredients

12 oz cheese tortellini (fresh or frozen)

2 tablespoons olive oil

4 cloves garlic, minced

1 can (14 oz) diced tomatoes, undrained

1 cup heavy cream

2 cups fresh spinach, roughly chopped

1 teaspoon dried basil

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional, for heat)

Salt and black pepper to taste

½ cup grated Parmesan cheese

Fresh basil for garnish (optional)

Instructions

Cook the Tortellini: Begin by bringing a large pot of salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and set aside.

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant and lightly golden.

Add Tomatoes: Stir in the diced tomatoes (with their juices) to the skillet and cook for 3-4 minutes, allowing the flavors to meld.

Create the Sauce: Lower the heat to medium-low, then pour in the heavy cream. Stir to combine, letting the mixture simmer gently for about 5 minutes until it thickens slightly.

Season and Add Spinach: Add the dried basil, oregano, red pepper flakes (if using), and season with salt and black pepper to taste. Gently fold in the chopped spinach, cooking for another 2-3 minutes until wilted.

Combine with Tortellini: Add the cooked tortellini to the skillet, tossing to coat the pasta evenly with the creamy sauce. Stir in the grated Parmesan cheese, allowing it to melt and enhance the creaminess.

Serve and Garnish: Once everything is well combined and heated through, remove from heat. Serve the creamy tomato spinach tortellini warm, garnished with fresh basil if desired.
