4 salmon fillets (about 6 oz each)

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach, chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Fresh basil leaves, for garnish

Prepare the Salmon: Season the salmon fillets with salt and pepper on both sides.

    Sear the Salmon: In a large skillet, heat olive oil over medium-high heat. Once hot, add the salmon fillets skin-side down. Sear for about 5 minutes until golden brown, then flip and sear for an additional 2-3 minutes until cooked through. Remove from the skillet and set aside.

      Make the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the cherry tomatoes and cook for about 3-4 minutes, until they start to soften.

        Add the Spinach: Stir in the chopped spinach and cook until just wilted.
