8 oz linguine

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

2 cups fresh spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Cook the Linguine: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Shrimp: In a large skillet over medium heat, add the olive oil. Once hot, add the shrimp and season with salt and pepper. Cook for about 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Then, add the halved cherry tomatoes and cook for 2-3 minutes until they begin to soften.

        Add Spinach and Cream: Stir in the fresh spinach until it wilts, then lower the heat and pour in the heavy cream. Mix well and bring to a gentle simmer.

          Combine Ingredients: Add the grated Parmesan cheese and Italian seasoning, stirring until the cheese melts and the sauce thickens. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency.

            Mix Lingunie and Shrimp: Add the cooked linguine and shrimp into the creamy sauce, tossing to combine everything evenly. Heat through for a couple of minutes.

              Serve: Adjust seasoning with salt and pepper if needed, then plate the creamy Tuscan shrimp linguine. Garnish with fresh basil leaves and additional Parmesan cheese if desired.
