8 oz fettuccine or pasta of your choice

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

3 cups fresh spinach

1 cup heavy cream

1 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil, for garnish

Red pepper flakes, for a kick (optional)

Instructions
 

Cook the Pasta:

    - In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water.

      Sauté the Shrimp:

        - In a large skillet over medium heat, add the olive oil. Once hot, add the shrimp. Season with salt, pepper, and a pinch of red pepper flakes if desired. Cook for about 2-3 minutes per side until the shrimp are pink and opaque. Remove them from the skillet and set aside.

          Make the Sauce:

            - In the same skillet, add the minced garlic and cherry tomatoes. Sauté for about 2-3 minutes until the tomatoes start to soften.

              - Add the fresh spinach, cooking until wilted.

                - Pour in the heavy cream and stir to combine. Bring to a gentle simmer, then add the grated Parmesan cheese and Italian seasoning. Stir until the cheese is melted and the sauce is smooth.

                  Combine Everything:

                    - Return the cooked shrimp to the skillet. Add the drained pasta and toss everything together. If the sauce is too thick, gradually add the reserved pasta water until you reach your desired consistency.

                      - Taste and adjust seasoning with additional salt, pepper, or red pepper flakes if needed.
