Creamy Watermelon Feta Pops

4 cups seedless watermelon, cubed

1 cup feta cheese, crumbled

1 cup Greek yogurt (plain or vanilla)

2 tablespoons honey (adjust based on sweetness preference)

1 tablespoon fresh lime juice

Fresh mint leaves, for garnish (optional)

Wooden popsicle sticks

Instructions
 

Prepare Watermelon: In a blender, add the cubed watermelon and blend until smooth. You may strain the juice through a fine mesh sieve if you prefer a smoother texture.

    Make the Creamy Mixture: In a medium bowl, combine the crumbled feta cheese, Greek yogurt, honey, and lime juice. Using a fork or food processor, mix until well combined and creamy. Adjust sweetness by adding more honey if desired.

      Layer the Pops: In popsicle molds, pour a layer of the blended watermelon at the bottom, filling them about 1/3 of the way. Tap the molds gently on the counter to remove any bubbles.

        Add Feta Cream Layer: Carefully spoon the creamy feta mixture over the watermelon layer, filling them another 1/3 of the way. You can use a knife or skewer to swirl it slightly into the watermelon layer for a marbled effect, but don’t overmix.

          Finish with Watermelon Layer: Top off the molds with the remaining watermelon blend. Use a skewer to gently swirl the top layer if you want a blended effect.

            Insert Sticks: Place the wooden popsicle sticks into the molds. Make sure to insert them deep enough to stay upright but not so deep that they touch the bottom layer.

              Freeze: Place the molds in the freezer for at least 4-6 hours, or until completely frozen.

                Unmold Pops: Once frozen, run warm water over the molds for a few seconds to help loosen the popsicles. Gently pull them out.
