Ingredients

2 large chicken breasts, butterflied and pounded to 1/2 inch thick

1 cup all-purpose flour

2 large eggs, beaten

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

Cooking spray (for air fryer)

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken: Begin by butterflying the chicken breasts for even cooking. Place them in between two pieces of plastic wrap and gently pound them to a thickness of about 1/2 inch using a meat mallet.

Set Up Breading Station: In three separate shallow dishes, set up your breading station: one with flour, one with beaten eggs, and one with a mixture of panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.

Bread the Chicken: Dip each chicken cutlet first into the flour, ensuring it is evenly coated. Shake off any excess flour. Next, dip the cutlet into the beaten eggs, and let any excess drip off. Finally, coat the chicken cutlet in the panko mixture, pressing gently to ensure the crumbs adhere well.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

Air Fry the Chicken: Lightly spray the air fryer basket with cooking spray. Place the breaded chicken cutlets in a single layer, ensuring they do not overlap. Lightly spray the tops of the cutlets with more cooking spray for extra crispiness.

Cook to Perfection: Air fry the chicken cutlets for 10-12 minutes, flipping halfway through, until they are golden brown and cooked through (internal temperature should reach 165°F or 74°C).

Serve: Carefully remove the chicken from the air fryer and let it rest for a couple of minutes. Garnish with chopped fresh parsley for a pop of color and serve with your favorite dipping sauce or side salad.
